By elegantly reinventing classic recipes, Le Cheval Blanc de Vandœuvres shows a devotion to Italian culinary traditions.

The menu reflects the charm of a chic Italian trattoria, where traditional dishes and international flavors coexist harmoniously.

Since March 2022, Matteo Guida, a native of Piacenza (Emilia-Romagna), has been the chef. He began his career at the Grand Hôtel du Golf in Crans Montana, served as sous-chef at Il Lago at the Four Seasons Hotel des Bergues and at Domaine de Châteauvieux. Trained under multi-starred chefs such as Gualtiero Marchesi, Heston Blumenthal, and Michel and Alain Roux, he has refined his expertise. His journey also took him to Russia, where he was the executive sous-chef at the Four Seasons Hotel Moskva in Moscow and the executive chef at the Four Seasons Lion Palace in Saint Petersburg.

Matteo Guida’s creations are astonishing, delicious, joyful, and generous. They include raw artichokes, Sardinian bread tile, langoustine crudo, lampascioni, vitello tonnato, black truffle beef carpaccio, cardoncelli, homemade pasta, Sicilian orange salad with Bronte pistachios, and mandarin sorbet with extra virgin olive oil.

Our chef Matteo Guida passionately creates traditional dishes. Enjoy our rigatoni al pesto, spaghetti alla carbonara, or paccheri al pomodoro for a true Italian experience. We also offer a daily special, always fresh and seasonal, along with authentic desserts like tiramisu all’italiana.
