Since late 2023, Florent El Saïr, one of the owners of the establishment, welcomes you and ensures this excellence. A chef from Lyon, graduated from the Institut Paul Bocuse and a master of flavors, Florent is driven by an obsession with customer satisfaction. His passion for culinary art led him to manage one of the best tables in Lyon.
Today, he is determined to instill this spirit at Le Cheval Blanc.
